Really great garden list. I like parsnips myself. If you have a longer time frame have you considered a nut tree or two?
I grew up around pecan trees and we filled shopping bags full every fall. Then made pies all winter.
Seriously, nuts are dense nutrition and store for years. Silviculture, the "farming of trees" goes back to the Neanderthal. The guy digging the site in Gibraltar proved from pollen analysis that they planted nut trees around where they lived.
The Amazonian cultures also farmed nut trees and built whole societies on them. It can be done. How doable is it really?
