My childhood was East Texas and I have relatives all the way into Louisiana. I went on my first deer hunt at 4.
The Louisiana relatives ate EVERYTHING that moved around them. Squirrels, birds, rabbits, frogs, gators, fish, armadillos, you name it they hunted and ate it.
The Texas farmer relatives all raised cattle and pigs. Plus the usual geese and chickens for the household consumption.
My aunt Louise was handy with an axe. I can remember watching her cut the heads off chickens then being put on "plucking duty".
I won't even tell you the "bush meat" I have had in Africa and South America when I was military. But, when someone offers you food in that setting, you smile and eat it.
Trust me, when people get HUNGRY enough they will get a LOT less squeamish. First animals to "vanish" will be dogs.
